Recipe: Super Seed Granola Bars

Back-to-school season call for snacks that are both fun and nourishing. These bars are packed with almonds, oats, flax, sunflower seeds, and raisins all held together with a marshmallow-style mix of honey, coconut oil, and grass-fed gelatin.
Nutritious enough for lunchboxes, tasty enough for dessert, and adaptable to what’s in your pantry. Vegetarian? Skip the gelatin and add extra honey + coconut oil.
What you’ll need (makes 10 snack-size bars):
1 cup almonds
1 cup oats
¼ cup sunflower seeds
¾ cup plain puffed rice (you can also use popcorn or another nut)
2 tbsp flax seeds
1 cup raisins
½ tsp sea salt
¼ tsp cinnamon
¼ cup honey
3 tbsp coconut oil
1 tbsp grass-fed gelatin
¼ cup water
½ tsp vanilla extract
Materials: Parchment paper, 8x8 glass baking dish and a food processor or molcajete
How to make:
Line the bottom of an 8x8” baking dish with parchment paper.
Grind ¼ cup of the almonds and ½ cup of the oats into a fine meal.
Lightly toast the remaining oats, flax, almonds, and sunflower seeds in a skillet; let cool.
Combine almond-oat meal with toasted mix, sprinkle with salt and cinnamon, and stir.
In a small pot, heat honey and water. Sprinkle gelatin over the top and stir until dissolved. Raise heat until bubbling, whisking until sticky but still liquid. Stir in coconut oil and vanilla. Let cool slightly.
Pour over the nut & seed mix, stir until combined.
Press into pan and refrigerate for 10 minutes.
Press again firmly, then refrigerate 1 hour before slicing.
